Please welcome Selma Fino, the first fennel variety to join the Deep Harvest ranks!  In 2024, we grew over a dozen fennel varieties, taking time to asses each one’s unique flavor profile. Selma Fino wowed us with its balance of sweetness and classic anise flavor. It also formed the highest percentage of large, hefty bulbs, demonstrating excellent bolt resilience compared to other varieties. Fennel bulb adds a unique, licorice flavor to a wide array dishes. It can be served raw, shaved or sliced, onto salads, or roasted or braised in larger chunks for pasta or stews. We love roasted it with beets and carrots for a root medley or adding the diced mild-flavored leaves to dressings and soups.

Planting Instructions:
Start Selma Fino Fennel indoors March through July. Optimal temperature for germination is 60-70 (F). Germination in 2-3 weeks. Transplant in fertile soil when plants are 3” tall. Planting depth: 1/2″. In-row spacing: 12″. Between Rows: 12-18″.

All of our seed is Non-GMO and Certified Organic by Washington State Department of Agriculture. We grow the majority of our varieties here at Deep Harvest Farm on Whidbey Island while we purchase the rest from other small, organic Northwest seed growers. Finally, all of our offerings are open-pollinated (OP) so that you too can save and share seed from these plants!
